I was talking to Husband about the foods that I’d really hate to live without. Because I get that end-of-days, Armageddon concern now and then that I’ll actually have to live on all the food stored in plastic buckets in my basement. And what I realized is that I love cheese. This comes as no surprise to anyone who reads this blog on occasion, right? But I really, really love cheese. And I’d be very sad to go without. Right now in my fridge there is some herbed chevre, some mozzerella (fresh), at least 4 pounds of cream cheese, some cheddar, some shredded mozzarella (totally different category, right?) swiss, and parmesan. On my shopping list is brie, gruyere, more fresh mozzerella, and that awesome Manchego from Spain.
If you’re concerned for my arteries, I should also tell you that fresh fruit is another thing I hope to never have to live without. I love those foods that squirt and crunch (maybe not at the same time). And the fresh veg – I love that, too. All those things I’d have to live without if I depended solely on that Armageddon food storage. That would be hard.
So I better get a cow. And a goat. And probably a sheep.
Sometime before the world ends.
And then I’d have to learn how to extract cheese from a goat.

There’s got to be some way to “store” a goat. And a cow. Yes, I’ve heard of barns but do you know what’s in barns? I do! I grew up with it! Lots of hay. Lots of ….erm, *stuff.* Lot’s of pigeons. Okay, the pigeons are a new addition but let me assure you, they’re no picnic. Especially when they end up in the water trough and scare the crap out of you. But at least I was in the barn, right?
My favorite cheese? Aged gouda. Hard, flaky, and served with a d’angou pear. =D

You have to milk the goat, Becca. That’s how you extract it. Good luck with that. I actually have a friend that milks her own goats and they drink the milk and all that yummy kind of stuff. We are going to get a piece of land soon just so we can get some cows, and maybe chickens and a goat.
